I am forecasting for my classes next year (my senior year). Should I take pre-calc or stats. Those are my two options which one would help me in my hopeful future in becoming a pilot or does it not really matter.

Study what you like. As long as your basic math skills are good (addition, subtraction, multiplication and division) you’ll be fine.

Basic arithmetic is all you need as a pilot. Take whichever class interests you more and focus on getting good grades. Your high school GPA will be reviewed on future applications.

Yes, airline apps is a website used like a common app for colleges but for airlines. Various regional, charter and major airlines use this platform. There is a specific section on education history where you provide your GPA for both high school and college.

Neither one of those will be of value to you as a pilot. The math that we use as pilots is rather simple, think addition, subtraction, multiplication and division. Clearly it sounds like you already have those down.
