Is there any reason why a 45 yr old Veteran (82 Airborne) with an associates in mechanical engineering couldn’t become a pilot? Thoughts or suggestions?

As long as you’re realistic about your goals then no. Mandatory retirement at the airlines is 65 so you’ve got a limited career trajectory. You’ll never be a 787 Capt flying to Narita but you could have a very nice career at a Regional or even at a Major as an FO or even narrow body Capt if you eventually earn a Bachelor’s degree.

I agree with Adam here. Have realistic expectations, get a degree, don’t waste any time in regards to flight training and you should be fine.

Any idea if a 3 year Bachelor’s earned in the UK is good enough?

The question asked is do you have a 4 year degree. If you can get some documentation stating it’s comparable you might have a claim but otherwise no.
