You can pursue anything you like but your job prospects will be SEVERLY limited to flying for others of your faith or some very understanding plane owners.

I will go further than Adam and state that I think you will find it almost impossible to find a job in aviation with those restrictions on your schedule. Aviation is a 24/7/365 industry that rarely stops.
