Realistically, around how many hours can you expect to fly as a flight instructor at ATP- assuming you want to fly as much as possible.

I’d say 75/month is average. Any more than that the quality of the
instruction could be negatively affected. There are other responsibilities
as a CFI such as AATD (sim) instruction, ground, written test proctoring,
and above all, taking care of yourself to ensure that you are providing
quality and safe instruction.
